It is the most heavily used room in the house and the one most often decorated as though it were a photograph. Prep length, the distance between the three things you touch most, somewhere a hot pan can land, and whether two people can pass each other — those settle whether a kitchen is pleasant long before any finish does.

None of which is an argument for restraint. A kitchen can be dark, saturated, patterned and thoroughly theatrical and still work perfectly. It simply has to work first.
